Diamond Cookies

Dear baking world,

Diamond cookies. They are the quintessential cookie of my childhood, but only my family would understand why. Back in the day, when my oldest cousin was a really little boy, my grandmother invented this cookie recipe. (Looks like I take after her.) From then on, it’s been a family favorite.

I know that in some ways I’m breaching the grandmother-granddaughter contract by sharing this recipe. She’s extremely protective of it, but as a baker, I feel like sharing cookie recipes isn’t a crime, but rather an obligation.

These cookies are made with Lyle’s Golden Syrup, which you can buy on Amazon. And trust me, it’s totally worth it. These cookies are very shortbread like in their texture, but something out of this world with the additional of Lyle’s. They’re just really special, delicious cookies.

It’s really funny because I copied this recipe from Mormor’s cookbook and I copied it totally wrong. I wrote down “1 Tablespoon of baking powder” and trusting past self and against my better judgement, I made them with one Tablespoon of baking powder. Hint: don’t make them with one tablespoon of baking powder. You will have metallic cookies on your hands, not diamond cookies. The second time around, I messed them up again, but I didn’t know it until Mom sent me the real recipe. And that my friends is why you don’t trust scribes. (I’m only kidding. That’s a history major joke, specifically Russian history involving Nikon.)

I cannot even begin to explain how much I love these cookies.They remind me of my childhood, but more importantly, they remind me of my Mormor (aka my grandmother) who would store these in little round tins and bring a batch with her everywhere she went. She isn’t able to make cookies as much these days, because that’s what age will do to you, but if books preserve the memory of an author, then I believe these cookies will also preserve the memory of my Mormor. Thank you for these cookies Mormor, and someday I hope my grandkids will enjoy them as much as we have. Letting the world try these wonderful cookies is my way of thanking you, so please forgive me.

These shortbread cookies from my Mormor have some Lyle’s Golden Syrup which add a special, and extra sweet, twist to them.
Ingredients
  • 1 cup butter
  • 1 cup sugar
  • 1 Tablespoon vanilla sugar
  • 2 Tablespoon Lyle’s Golden Syrup
  • 2 cups flour
  • 1 teaspoon baking powder
  • a dash of salt
Instructions
  1. Preheat oven to 350 degrees.
  2. Cream butter and sugar and vanilla sugar. Add golden syrup, flour and baking powder.
  3. Roll small portions into a skinny hot dog shape.
  4. Bake at 350 degrees for 10 minutes or until golden brown. Do not under bake.
  5. Let cool for a few minutes then slice diagonally with a sharp knife. Enjoy!
